Under The Covers’ Recipe of the Day – Parmesan Chicken

This is today’s recipe of the day for Sunday 2nd June 2019

Parmesan Chicken

Serves 2 people takes 20 mins to prepare and 15 mins to cook.

1 x Egg White
5 tbsp Parmesan Cheese – finely grated
2 x Chicken Fillets
400g x New Potatoes – cut into small cubes
2 x Shallots – finely chopped
Pinch of Salt and Black Pepper
Olive oil

Heat the grill to a medium heat, line the grill pan with foil. Beat the egg white on a plate, tip the parmesan onto a second plate. Coat each chicken, firstly with the egg white and then the cheese. Place the coated chicken under the grill for 10-12 minutes, turning once until browned and crisp.

Meanwhile, boil the potatoes for 10 minutes and drain. Fry the shallots in a little olive oil until crisp. Place a layer of potatoes on the plate, then a layer of shallots, followed by the chicken on top.
