This is today’s recipe of the day for Sunday 21st April 2019
Serves 2 people, 30mins to prepare and 20mins to cook (varies on the thickness of the mushrooms).
4 tbsp x Soft Cheese
2 tbsp x Sweet Basil – finely chopped
2 x Portebello Mushrooms – peeled and de-stalked
1 x Crusty Roll (for breadcrumbs)
2 x Garlic Cloves – peeled and crushed
pinch of Sea Salt
Crack of Black Pepper
2 tbsp x Lemon Juice (or more to taste)
2 x Drizzles Olive Oil
Preheat your oven to gas mark 6. Add the basil and lemon juice to the soft cheese and mix together thoroughly. Add the garlic, sea salt and black pepper, and mix thoroughly again. Spoon the mixture onto the surface of the mushrooms and then cover the mixture with breadcrumbs. Put the mushrooms onto a foil-lined baking tray and bake for approximately 20mins, this can vary dependent upon the thickness of the mushroom.
