Under The Covers’ Recipe of the Day – Leek & Potato Soup

This is today’s recipe of the day for Sunday 19th August 2018

Leek & Potato Soup

Serves 4, Prep 15mins, Cook 35mins

4 x Medium Potatoes, cubed
4 x Medium Leeks, finely chopped
1Ltr x Organic Vegetable Stock
½ x Small Onion, diced
1tbsp x Vegetable Oil
50ml x Single Cream
75ml x Milk

Heat the oil in a large saucepan, add the onion and 2/3rds of the leeks, fry for 5mins until softened. Add the potatoes and stock, bring to the boil, then reduce the heat and simmer covered for 20mins. Transfer to a blender adding the remaining leeks, milk and cream, blitz until smooth. Return to the pan, reheat and serve hot.
