Spicy Spaghetti with Garlic Mushrooms
Serves 4, Prep 10mins, Cook 15mins
2tbsp x Olive Oil
250g x Chestnut Mushroom, thickly sliced
1 x Garlic Clove, thinly sliced
A small bunch of Parsley, leaves only
1 x Celery Stick, finely chopped
1 x Onion, finely chopped
1 x 400g can of Chopped Tomatoes
1⁄2 x Red Chilli, deseeded and finely chopped, (or use dried Chilli Flakes)
300g x Spaghetti
Heat 1 tbsp oil in a pan, add the mushrooms, fry over a high heat for 3mins until golden and softened. Add the garlic, fry for 1 min more, tip into a bowl with the parsley. Add the onion and celery to the pan with the rest of the oil, then fry for 5mins until lightly coloured.
Stir in the tomatoes, chilli and a little salt, bring to the boil. Reduce the heat and simmer, uncovered, for 10mins until thickened. Meanwhile, cook the spaghetti to packet instructions, then drain. Toss with the sauce, top with the garlicky mushrooms, and serve.
